Upcycled ginger beer soda recipe

About this resource: The base of the soda is made using surplus bread to replace some of the malt in the brewing process, just like our alcoholic beer recipe. The brewer then needs to make a ginger wort using fresh ginger and coriander seeds. Finally, to sweeten up the brew and to add an extra zing, a citrus syrup ties it all together for a delicious and refreshing drink that all can enjoy.

Enjoy this fun and tasty way to reuse one of the most wasted food items in Aotearoa, bread. Each year 29 million loaves of bread are wasted in New Zealand alone. Upcycling is just one way we can help divert this waste by transforming it into a new product that is easy to make, and even easier to enjoy.
