New Resource: Upcycled Ginger Beer Soda Recipe

By popular demand, our Upcycled Food Lab have developed a recipe for upcycled Ginger Beer Soda!

Our ginger beer was first sampled by guests at our 'upcycled food dining experience' event as part of NZ International Science Festival in July. The brew really made headlines last month, however, when we gave it away at our on-campus event for International Day of Awareness for Food Loss and Waste. Following this event, Upcycled Food Lab Scientist Graham Eyers spoke about the ginger beer on RNZ’s The Panel. Since then, we have been inundated with requests for the recipe, so our Upcycled Food Lab set to work, and here it is! A guide to making your own upcycled ginger beer soda at home, using your own surplus bread and citrus fruit.

The base of the soda is made using surplus bread to replace some of the malt in the brewing process, just like our alcoholic beer recipe. The brewer then needs to make a ginger wort using fresh ginger and coriander seeds. Finally, to sweeten up the brew and add an extra zing, a citrus syrup ties it all together for a delicious and refreshing drink that all can enjoy.

Enjoy this fun and tasty way to reuse one of the most wasted food items in Aotearoa- bread. Each year 29 million loaves of bread are wasted in New Zealand alone. Upcycling is just one way we can help divert this waste by transforming it into a new product that is easy to make, and even easier to enjoy.
