The future of brewers spent grain – beyond crackers

About this resource: This article was awarded second prize in the Food Tech Solutions NZIFST Undergraduate Writing Competition 2022. It was featured in the New Zealand Institute of Food Science and Technology’s periodic magazine “Food New Zealand”. Spent grain is a low value non reducible food waste that is difficult to deal with and to be able to deal with the huge quantities it’s produced in it is important that upcycling and other environmentally positive ventures are partnered together. By upcycling spent grain into crackers awareness is bought to the consumer, and shows innovation in how to transform these low value goods but upcycling alone cannot deal with the whole problem. By introducing biorefineries alongside upcycling initiatives it can be possible to tackle the whole spent grain problem while also providing high value good, and reducing pressure on the environment.
