Development of a nutritionally enhanced beverage using flax meal fractions

Flaxseed consumption has been linked to positive health effects. Flaxseed meal is a by-product of cold-pressing flaxseed oil from seeds of the Flax plant (Linum usitatissimum L). Flaxseed meal has a unique nutritional composition with a high protein and soluble fibre content that includes (SDG) lignan. Fractionation of the defatted meal to yield a soluble fibre and protein extract that can be used in a beverage to support a possible health claim was the objective of this study.
