Reshined Roots: Carrot Crackers

University of Otago students Sydney Collin, Elizabeth Cunliffe, and Molly Goodisson are co-founders of ‘Reshined Roots’, a start-up working on upcycling ‘ugly’ carrots into tasty, crispy, snacks.

The trio were finalists of Start Up Dunedin’s Audacious programme, which helps facilitate turning ideas of young entrepreneurs into reality. We hope to see Reshined Roots’ snacks on supermarket shelves! They won the prize for the ‘best pitch’ of all the groups who presented on pitch night.

Co-founder Sydney Collin conducted a summer research project, funded by Food Waste Innovation’s seed funding to understand where, why, and how much waste is occurring in the root vegetable industry. Sydney conducted interviews with stakeholders to identify where the issues occur. The aim of this project was to understand how to secure a supply of root vegetables that would otherwise be wasted that will positively impact upcycling of food while also understanding the barriers to achieving this.
